Justine Audoin, born in 1991 in France, is a chef. In a time when she’ll do anything but sit down, Justine tells you about her recipes as if they were combinations she’s already rectified three times in her brain. With a technical arsenal validated in the school of Thierry Marx and Ferrandi, and experiences as varied as Jean-Jacques Goldman’s discography (Lucas Carton, Babel, Saint James), the Bordeaux native offers a cuisine of expression. Also a consultant chef for several establishments, she immerses herself and gets involved in each project as if she had been part of the family for generations. With her, every plate is an experience, every encounter a memory.
Since 2022, Villa Medici has welcomed cooks as residents. For the duration of their stay, they take over the kitchens of the French Academy in Rome to feed the residents and staff and build a culinary project.
